Description
A delicious twist on the classic grilled cheese sandwich featuring creamy avocado, tangy sun-dried tomatoes, and melted cheese between crispy golden sourdough bread.
Ingredients
- 4 slices sourdough bread
- 1 ripe avocado, sliced
- 1/4 cup sun-dried tomatoes, chopped
- 4 slices provolone or mozzarella cheese
- 2 tablespoons butter, softened
- 1 teaspoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Heat a skillet over medium heat and lightly coat with the olive oil.
- Spread butter evenly on one side of each slice of sourdough bread.
- Place two slices of bread butter-side down in the skillet.
- Add one slice of cheese to each piece of bread.
- Layer avocado slices and chopped sun-dried tomatoes over the cheese and season lightly with salt and black pepper.
- Place another slice of cheese on top of the fillings.
- Top with the remaining bread slices, butter-side facing up.
- Cook for 3–4 minutes until the bottom is golden brown and the cheese begins to melt.
- Carefully flip the sandwiches and cook for another 3–4 minutes until the second side is crisp and the cheese is fully melted.
- Remove from the skillet, slice in half, and serve warm.
Notes
- Use ripe but firm avocado slices so they hold their shape during cooking.
- Swap provolone for mozzarella or cheddar depending on your taste preference.
- Press the sandwich lightly with a spatula while cooking to help the cheese melt evenly.
- Serve with soup or a fresh salad for a complete meal.
- Best enjoyed immediately while the bread is crisp and the cheese is melted.
