Description

A delicious twist on the classic grilled cheese sandwich featuring creamy avocado, tangy sun-dried tomatoes, and melted cheese between crispy golden sourdough bread.


Ingredients

  • 4 slices sourdough bread
  • 1 ripe avocado, sliced
  • 1/4 cup sun-dried tomatoes, chopped
  • 4 slices provolone or mozzarella cheese
  • 2 tablespoons butter, softened
  • 1 teaspoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat a skillet over medium heat and lightly coat with the olive oil.
  2. Spread butter evenly on one side of each slice of sourdough bread.
  3. Place two slices of bread butter-side down in the skillet.
  4. Add one slice of cheese to each piece of bread.
  5. Layer avocado slices and chopped sun-dried tomatoes over the cheese and season lightly with salt and black pepper.
  6. Place another slice of cheese on top of the fillings.
  7. Top with the remaining bread slices, butter-side facing up.
  8. Cook for 3–4 minutes until the bottom is golden brown and the cheese begins to melt.
  9. Carefully flip the sandwiches and cook for another 3–4 minutes until the second side is crisp and the cheese is fully melted.
  10. Remove from the skillet, slice in half, and serve warm.

Notes

  • Use ripe but firm avocado slices so they hold their shape during cooking.
  • Swap provolone for mozzarella or cheddar depending on your taste preference.
  • Press the sandwich lightly with a spatula while cooking to help the cheese melt evenly.
  • Serve with soup or a fresh salad for a complete meal.
  • Best enjoyed immediately while the bread is crisp and the cheese is melted.
