Description

These Grilled Salmon Skewers are tender, flavorful, and paired perfectly with a creamy dill yogurt sauce. A light, healthy, and easy-to-make seafood dish ideal for summer grilling.


Ingredients

  • 1 1/2 lbs salmon fillets, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • 2 garlic cloves, minced
  • 1 teaspoon dried dill
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine olive oil, lemon juice, minced garlic, dried dill, paprika, salt, and pepper.
  2. Add the salmon cubes to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated salmon cubes onto the soaked wooden skewers.
  5. Grill the salmon skewers for about 2-3 minutes per side, or until cooked through and slightly charred.
  6. Remove from the grill and set aside.
  7. In a medium bowl, mix Greek yogurt, fresh dill, lemon juice, minced garlic, salt, and pepper until smooth.
  8. Adjust seasoning if needed and refrigerate the sauce until ready to serve.
  9. Serve the salmon skewers hot with the creamy dill yogurt sauce on the side.
  10. Garnish with fresh dill and lemon wedges if desired.

Notes

  • Make sure to soak wooden skewers to prevent burning on the grill.
  • Fresh salmon works best for this recipe, but thawed frozen salmon can also be used.
  • The yogurt sauce can be made in advance and stored in the fridge for up to 2 days.
