Description
These Grilled Salmon Skewers are tender, flavorful, and paired perfectly with a creamy dill yogurt sauce. A light, healthy, and easy-to-make seafood dish ideal for summer grilling.
Ingredients
- 1 1/2 lbs salmon fillets, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 lemon, juiced
- 2 garlic cloves, minced
- 1 teaspoon dried dill
- 1 teaspoon paprika
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
- 1 cup plain Greek yogurt
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- In a large bowl, combine olive oil, lemon juice, minced garlic, dried dill, paprika, salt, and pepper.
- Add the salmon cubes to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated salmon cubes onto the soaked wooden skewers.
- Grill the salmon skewers for about 2-3 minutes per side, or until cooked through and slightly charred.
- Remove from the grill and set aside.
- In a medium bowl, mix Greek yogurt, fresh dill, lemon juice, minced garlic, salt, and pepper until smooth.
- Adjust seasoning if needed and refrigerate the sauce until ready to serve.
- Serve the salmon skewers hot with the creamy dill yogurt sauce on the side.
- Garnish with fresh dill and lemon wedges if desired.
Notes
- Make sure to soak wooden skewers to prevent burning on the grill.
- Fresh salmon works best for this recipe, but thawed frozen salmon can also be used.
- The yogurt sauce can be made in advance and stored in the fridge for up to 2 days.
