Description

These grilled veggie skewers are a colorful and healthy addition to any cookout. Packed with fresh vegetables like zucchini, mushrooms, and bell peppers, they are marinated in a savory balsamic-herb mixture and grilled to perfection.


Ingredients

  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • Salt and pepper to taste
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 zucchini, sliced into 1/2-inch thick rounds
  • 1 red onion, cut into wedges
  • 8 large mushrooms, halved
  • 8 cherry tomatoes
  • Wooden or metal skewers

Instructions

  1. In a bowl, whisk together the balsamic vinegar, olive oil, garlic, rosemary, thyme, salt, and pepper.
  2. Place all the vegetables in a large bowl and pour the marinade over them. Toss well to coat. Cover and refrigerate for at least 30 minutes.
  3. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  4. Preheat grill to medium heat.
  5. Thread the marinated vegetables alternately onto the skewers.
  6. Grill skewers for 10 to 15 minutes, turning occasionally, until vegetables are tender and lightly charred.
  7. Serve hot as a main or side dish.
