  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons chopped fresh parsley, for serving (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes. Drain excess fat if needed.
  2. Add the onion and cook until softened, about 3 minutes.
  3. Stir in the diced potatoes and carrots. Cook for 5 minutes, stirring occasionally.
  4. Add the bell pepper and garlic. Cook for 2 more minutes.
  5. Season the mixture with salt, pepper, smoked paprika, oregano, and red pepper flakes (if using).
  6. Pour in the beef broth and Worcestershire sauce. Stir to combine and bring to a simmer.
  7. Cover and reduce heat to medium-low. Cook for 10-12 minutes, until the potatoes are tender, stirring occasionally.
  8. Remove the lid and let simmer for a few more minutes to reduce any excess liquid if needed.
