Description

This quick and easy ground beef and egg noodles dinner is a perfect weeknight meal! Made with savory ground beef, tender egg noodles, and simple pantry staples, it’s a hearty and comforting dish the whole family will love.

Ingredients

  • 1 lb ground beef

  • 8 oz egg noodles (quick-cooking)

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 teaspoon paprika

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon salt (or to taste)

  • 1/4 teaspoon black pepper

  • 1 cup beef broth

  • 1/2 cup sour cream

  • 1/2 cup shredded cheddar cheese (optional)

  • Fresh parsley for garnish (optional)

Instructions

  • In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 3 minutes.

  • Add garlic and cook for another 30 seconds.

  • Add ground beef and cook until browned and no longer pink. Drain excess fat.

  • Stir in paprika, Italian seasoning, salt, and pepper.

  • Pour in beef broth and bring to a simmer.

  • Add egg noodles and stir to combine. Cover and cook for 6–8 minutes, or until noodles are tender, stirring occasionally.

  • Reduce heat to low. Stir in sour cream and cheddar cheese (if using), and mix until creamy and well combined.

  • Garnish with chopped parsley and serve hot.

Notes

  • You can substitute sour cream with Greek yogurt for a lighter option.

  • Add frozen peas or steamed broccoli for extra veggies.

  • For a spicier kick, add a pinch of red pepper flakes.

  • Leftovers can be stored in an airtight container for up to 3 days.
