Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 small yellow onion, diced
- 1 cup chopped bell peppers (red or green)
- 2 cups fresh spinach
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/4 tsp crushed red pepper flakes (optional)
- 1/2 cup shredded mozzarella cheese (optional for topping)
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
- In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent.
- Add minced garlic and ground turkey. Cook until the turkey is browned and cooked through.
- Season with paprika, garlic powder, onion powder, salt, pepper, and red pepper flakes.
- Add bell peppers and cook for a few more minutes until slightly softened.
- Stir in fresh spinach and cook until wilted. Remove from heat.
- In a large mixing bowl, combine the cooked turkey mixture with diced sweet potatoes. Mix well.
- Transfer the mixture into the prepared baking dish and spread evenly.
- Cover with foil and bake for 30 minutes. Remove foil, sprinkle with shredded mozzarella cheese if using, and bake for an additional 10-15 minutes or until sweet potatoes are tender.
- Remove from oven and let cool slightly before serving.
