Description

Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 small yellow onion, diced
  • 1 cup chopped bell peppers (red or green)
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1/2 cup shredded mozzarella cheese (optional for topping)

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent.
  3. Add minced garlic and ground turkey. Cook until the turkey is browned and cooked through.
  4. Season with paprika, garlic powder, onion powder, salt, pepper, and red pepper flakes.
  5. Add bell peppers and cook for a few more minutes until slightly softened.
  6. Stir in fresh spinach and cook until wilted. Remove from heat.
  7. In a large mixing bowl, combine the cooked turkey mixture with diced sweet potatoes. Mix well.
  8. Transfer the mixture into the prepared baking dish and spread evenly.
  9. Cover with foil and bake for 30 minutes. Remove foil, sprinkle with shredded mozzarella cheese if using, and bake for an additional 10-15 minutes or until sweet potatoes are tender.
  10. Remove from oven and let cool slightly before serving.
