Description
A hearty and healthy ground turkey vegetable soup packed with lean protein and nutrient-rich vegetables. Perfect for a cozy, satisfying meal.
Ingredients
- 1 tablespoon olive oil
 - 1 pound ground turkey
 - 1 small onion, chopped
 - 2 cloves garlic, minced
 - 3 medium carrots, sliced
 - 2 stalks celery, sliced
 - 1 zucchini, chopped
 - 1 (14.5 oz) can diced tomatoes
 - 1 (15 oz) can tomato sauce
 - 6 cups chicken broth
 - 1 teaspoon dried basil
 - 1 teaspoon dried oregano
 - Salt and pepper, to taste
 - 1 cup frozen green beans
 - 1 cup frozen corn
 
Instructions
- In a large pot, heat the olive oil over medium heat.
 - Add the ground turkey and cook until browned, breaking it up as it cooks.
 - Add the chopped onion and garlic; cook for 2–3 minutes until fragrant.
 - Add the carrots, celery, and zucchini; stir and cook for another 5 minutes.
 - Stir in the diced tomatoes, tomato sauce, and chicken broth.
 - Add the basil, oregano, salt, and pepper; bring to a boil.
 - Reduce the heat and simmer uncovered for 20 minutes.
 - Add the frozen green beans and corn; simmer for another 10 minutes until all vegetables are tender.
 - Taste and adjust seasoning as needed before serving.
 
Notes
- This soup can be frozen for up to 3 months.
 - Use low-sodium broth if watching your salt intake.
 - Feel free to swap out or add different vegetables based on what you have on hand.
