Ingredients
- 1 lb. lean ground beef
 - 1 medium onion, diced
 - 2 cloves garlic, minced
 - 2 medium carrots, sliced
 - 3 medium potatoes, peeled and diced
 - 1 can (15 oz.) corn, drained
 - 1 can (15 oz.) green beans, drained
 - 1 can (15 oz.) diced tomatoes, undrained
 - 1 can (15 oz.) tomato sauce
 - 3 cups beef broth
 - 1 teaspoon Italian seasoning
 - Salt and pepper to taste
 
Instructions
- In a large pot over medium heat, cook the ground beef until browned. Drain excess fat.
 - Add the diced onion and garlic to the pot and sauté until softened, about 3 minutes.
 - Stir in the carrots, potatoes, corn, green beans, diced tomatoes, and tomato sauce.
 - Pour in the beef broth and add the Italian seasoning, salt, and pepper.
 - Bring the soup to a boil, then reduce heat and simmer for about 30 minutes, or until the vegetables are tender.
 - Taste and adjust seasoning if needed before serving.
 
Notes
- You can substitute or add other vegetables like peas or celery.
 - This soup freezes well for up to 3 months.
 - For extra flavor, try adding a splash of Worcestershire sauce or a bay leaf while simmering.
