Description

Ingredients

  • 20 oz frozen shredded hash browns, thawed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 cups shredded cheddar cheese, divided
  • 6 large eggs
  • 6 slices beef bacon or turkey bacon, cooked and crumbled
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 425°F (220°C). Grease a 12-inch pizza pan or line it with parchment paper.
  2. In a large bowl, mix the thawed hash browns, olive oil, salt, pepper, and 1/2 cup of shredded cheddar cheese.
  3. Press the hash brown mixture evenly onto the pizza pan to form a crust, making sure to build up the edges slightly.
  4. Bake the crust for 20-25 minutes, or until golden brown and crispy.
  5. Remove from the oven and sprinkle 1/2 cup of cheddar cheese over the crust.
  6. Crack the eggs evenly over the pizza crust. Sprinkle with the cooked beef or turkey bacon and the remaining 1/2 cup of cheddar cheese.
  7. Return to oven and bake for another 10-12 minutes, or until the egg whites are set and yolks are cooked to your preference.
  8. Remove from the oven and garnish with sliced green onions. Let it cool slightly before slicing and serving.
