Description
A tropical twist on pizza, this Hawaiian Chicken & Caramelized Onion Pizza combines sweet pineapple, savory chicken, and rich caramelized onions over a crispy crust, topped with melted mozzarella and a tangy sauce.
Ingredients
- 1 (12-inch) pre-baked pizza crust
- 2 teaspoons olive oil
- 1 large yellow onion, thinly sliced
- 1/4 teaspoon salt
- 1 tablespoon balsamic vinegar
- 1 cup cooked chicken breast, shredded or chopped
- 1/2 cup barbecue sauce
- 1/2 cup pineapple tidbits, drained
- 1 1/2 cups shredded mozzarella cheese
- Fresh cilantro leaves, optional for garnish
Instructions
- Preheat oven to 450°F.
- Heat olive oil in a skillet over medium heat. Add onions and salt; cook, stirring occasionally, for about 15 minutes or until golden brown and caramelized. Stir in balsamic vinegar and cook for 1 more minute. Remove from heat.
- In a small bowl, toss chicken with barbecue sauce until well coated.
- Place pizza crust on a baking sheet or pizza stone. Spread caramelized onions evenly over the crust.
- Top with barbecue chicken, pineapple tidbits, and shredded mozzarella cheese.
- Bake for 10–12 minutes, or until cheese is melted and bubbly.
- Remove from oven and sprinkle with fresh cilantro if desired. Slice and serve.
Notes
- Use freshly cooked chicken or leftover rotisserie chicken for convenience.
- You can substitute red onion for yellow onion for a sharper flavor.
- Adjust the amount of barbecue sauce based on your sweetness preference.
