Description

A tropical twist on pizza, this Hawaiian Chicken & Caramelized Onion Pizza combines sweet pineapple, savory chicken, and rich caramelized onions over a crispy crust, topped with melted mozzarella and a tangy sauce.


Ingredients

  • 1 (12-inch) pre-baked pizza crust
  • 2 teaspoons olive oil
  • 1 large yellow onion, thinly sliced
  • 1/4 teaspoon salt
  • 1 tablespoon balsamic vinegar
  • 1 cup cooked chicken breast, shredded or chopped
  • 1/2 cup barbecue sauce
  • 1/2 cup pineapple tidbits, drained
  • 1 1/2 cups shredded mozzarella cheese
  • Fresh cilantro leaves, optional for garnish

Instructions

  1. Preheat oven to 450°F.
  2. Heat olive oil in a skillet over medium heat. Add onions and salt; cook, stirring occasionally, for about 15 minutes or until golden brown and caramelized. Stir in balsamic vinegar and cook for 1 more minute. Remove from heat.
  3. In a small bowl, toss chicken with barbecue sauce until well coated.
  4. Place pizza crust on a baking sheet or pizza stone. Spread caramelized onions evenly over the crust.
  5. Top with barbecue chicken, pineapple tidbits, and shredded mozzarella cheese.
  6. Bake for 10–12 minutes, or until cheese is melted and bubbly.
  7. Remove from oven and sprinkle with fresh cilantro if desired. Slice and serve.

Notes

  • Use freshly cooked chicken or leftover rotisserie chicken for convenience.
  • You can substitute red onion for yellow onion for a sharper flavor.
