Description
A tropical, no-bake dessert made with pineapple, coconut, marshmallows, and whipped topping—perfect for potlucks or summer gatherings.
Ingredients
- 1 can (20 oz) crushed pineapple, drained
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 1/2 cups sweetened shredded coconut
- 1 1/2 cups mini marshmallows
- 1 can (8 oz) pineapple tidbits, drained
- 1 container (8 oz) whipped topping, thawed
- Maraschino cherries, for garnish (optional)
Instructions
- In a large mixing bowl, combine the drained crushed pineapple and instant vanilla pudding mix. Stir until well combined.
- Add the sweetened shredded coconut, mini marshmallows, and drained pineapple tidbits to the bowl. Stir gently to incorporate all ingredients.
- Fold in the thawed whipped topping until evenly distributed throughout the mixture.
- Transfer the pineapple coconut fluff mixture to a serving dish or individual dessert cups.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld.
- Before serving, optionally garnish with maraschino cherries for a pop of color.
Notes
- Make sure to drain the pineapple well to prevent the dessert from becoming too runny.
- This dessert can be made a day ahead and stored in the refrigerator.
- You can use unsweetened coconut if you prefer a less sweet version.
