Description

Ingredients

  • 2 ripe bananas, mashed
  • 2 cups old-fashioned oats
  • 1/3 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1/3 cup mini chocolate chips
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup dried cranberries or raisins
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mash the bananas with a fork until smooth.
  3. Add the peanut butter and honey (or maple syrup) and stir to combine.
  4. Stir in the oats, cinnamon, vanilla, and salt until well mixed.
  5. Fold in the chocolate chips, dried fruit, and nuts (if using).
  6. Scoop 2-tablespoon portions of dough onto the prepared baking sheet and flatten slightly with a spoon.
  7. Bake for 12–15 minutes or until the cookies are set and lightly golden on the bottom.
  8. Let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
