Ingredients
- 1/2 cup coconut oil, melted
- 3/4 cup coconut sugar
- 2 eggs
- 1/2 cup almond butter
- 1 tsp vanilla extract
- 1/2 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup chocolate chips (plus more for topping)
Instructions
- Preheat oven to 350°F and grease a cast iron skillet or 8×8 baking dish.
- In a large bowl, whisk together melted coconut oil and coconut sugar.
- Add in the eggs, almond butter, and vanilla extract. Mix until smooth.
- Stir in almond flour, cocoa powder, baking soda, and salt until fully combined.
- Fold in chocolate chips.
- Pour batter into the greased skillet and spread evenly.
- Top with extra chocolate chips if desired.
- Bake for 20–22 minutes, or until center is just set and edges are slightly crisp.
- Let cool for a few minutes before serving warm, optionally with ice cream.
Notes
- You can substitute peanut butter or cashew butter for almond butter.
- For a more gooey center, bake closer to 20 minutes.
