Ingredients
- 1 cup spelt, white, or oat flour
- 6 tbsp cocoa powder
- 1/2 tsp baking soda
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sugar or unrefined sugar
- 1/4 cup yogurt (such as almond, coconut, or dairy yogurt)
- 2 tbsp oil or nut butter
- 2/3 cup water or milk of choice
- 2 tsp pure vanilla extract
- 1 tsp vinegar (white or apple cider vinegar)
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan.
- In a large bowl, stir together all dry ingredients.
- In a separate bowl, whisk together all wet ingredients.
- Combine wet and dry ingredients, stirring until just evenly mixed.
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before frosting.
