Description

These heart-shaped cookies with jam are buttery, tender, and filled with your favorite fruit preserves, making them a perfect treat for Valentine’s Day or any special occasion.


Ingredients

  • 1 cup (226g) unsalted butter, softened
  • 2/3 cup (80g) powdered sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup fruit jam (strawberry, raspberry, or your favorite)
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, cream the butter and powdered sugar together until light and fluffy.
  2. Add the egg yolks and vanilla extract, mixing until well combined.
  3. Gradually add the flour and salt, mixing until a soft dough forms.
  4. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
  5. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Roll out one disc of dough on a lightly floured surface to about 1/4 inch thickness.
  7. Use a heart-shaped cookie cutter to cut out cookies. Use a smaller heart cutter to cut out centers from half of the cookies (these will be the tops).
  8. Place cookies on the prepared baking sheets and bake for 8–10 minutes, or until the edges are lightly golden.
  9. Let cookies cool completely on a wire rack.
  10. Spread a small amount of jam on the bottom halves of the cookies and top with the cut-out cookies to create a sandwich.
  11. Dust the tops with powdered sugar before serving.

Notes

  • You can use any flavor of jam, but thicker jams work best to prevent leaking.
  • Make sure cookies are completely cool before assembling to avoid melting the jam.
  • Dough can be made ahead and chilled overnight.
