Description
These heart-shaped cookies with jam are buttery, tender, and filled with your favorite fruit preserves, making them a perfect treat for Valentine’s Day or any special occasion.
Ingredients
- 1 cup (226g) unsalted butter, softened
- 2/3 cup (80g) powdered sugar
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 2 cups (250g) all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup fruit jam (strawberry, raspberry, or your favorite)
- Powdered sugar, for dusting
Instructions
- In a large bowl, cream the butter and powdered sugar together until light and fluffy.
- Add the egg yolks and vanilla extract, mixing until well combined.
- Gradually add the flour and salt, mixing until a soft dough forms.
- Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out one disc of dough on a lightly floured surface to about 1/4 inch thickness.
- Use a heart-shaped cookie cutter to cut out cookies. Use a smaller heart cutter to cut out centers from half of the cookies (these will be the tops).
- Place cookies on the prepared baking sheets and bake for 8–10 minutes, or until the edges are lightly golden.
- Let cookies cool completely on a wire rack.
- Spread a small amount of jam on the bottom halves of the cookies and top with the cut-out cookies to create a sandwich.
- Dust the tops with powdered sugar before serving.
Notes
- You can use any flavor of jam, but thicker jams work best to prevent leaking.
- Make sure cookies are completely cool before assembling to avoid melting the jam.
- Dough can be made ahead and chilled overnight.
