Description

This hearty Dutch Oven Beef Stew is a comforting one-pot meal filled with tender chunks of beef, potatoes, and vegetables simmered in a rich, savory broth. Perfect for cozy nights or meal prep.


Ingredients

  • 2 lbs chuck roast, cut into 1-inch cubes
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/4 cup all-purpose flour
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 4 carrots, peeled and chopped
  • 3 potatoes, peeled and chopped
  • 2 celery stalks, chopped
  • 1 cup frozen peas
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the beef with salt and pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat. Brown the beef in batches and set aside.
  4. In the same pot, sauté onion until softened, about 5 minutes. Add garlic and cook for 1 minute.
  5. Stir in tomato paste and cook for another 2 minutes.
  6. Sprinkle in the flour and stir to coat the vegetables.
  7. Slowly add beef broth, stirring to avoid lumps. Add Worcestershire sauce, thyme, rosemary, and bay leaves.
  8. Return the beef to the pot, cover, and transfer to the preheated oven. Cook for 1.5 hours.
  9. Add carrots, potatoes, and celery to the pot. Stir well, cover, and cook for another 1 hour, until vegetables and beef are tender.
  10. Remove from oven, discard bay leaves, and stir in frozen peas. Let sit for 5 minutes.
  11. Garnish with fresh parsley and serve warm.

Notes

  • For deeper flavor, sear the beef in batches to avoid overcrowding.
  • You can substitute red wine for part of the beef broth if desired.
  • Leftovers store well and taste even better the next day.
