Description

These herbed carrots are a simple yet flavorful side dish made with tender cooked carrots tossed in a buttery mix of fresh parsley, thyme, and chives. Perfect for holiday meals or everyday dinners.


Ingredients

  • 2 pounds carrots, peeled and cut into 1/2-inch slices on the diagonal
  • 1 teaspoon salt, plus more to taste
  • 2 tablespoons unsalted butter
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon chopped fresh thyme
  • Freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the sliced carrots and cook until tender but still slightly firm, about 8 to 10 minutes.
  2. Drain the carrots and return them to the pot.
  3. Add the butter to the warm carrots and stir until melted and the carrots are coated.
  4. Stir in the parsley, chives, and thyme. Season with additional salt and freshly ground black pepper to taste.
  5. Serve warm.

Notes

  • You can substitute dried herbs if fresh ones aren’t available, but use only a third of the amount.
  • These carrots can be made a few hours ahead and reheated gently on the stovetop.
  • Feel free to add a pinch of sugar or honey for a sweeter variation.
