Description
These herbed carrots are a simple yet flavorful side dish made with tender cooked carrots tossed in a buttery mix of fresh parsley, thyme, and chives. Perfect for holiday meals or everyday dinners.
Ingredients
- 2 pounds carrots, peeled and cut into 1/2-inch slices on the diagonal
- 1 teaspoon salt, plus more to taste
- 2 tablespoons unsalted butter
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh chives
- 1 teaspoon chopped fresh thyme
- Freshly ground black pepper, to taste
Instructions
- Bring a large pot of salted water to a boil. Add the sliced carrots and cook until tender but still slightly firm, about 8 to 10 minutes.
- Drain the carrots and return them to the pot.
- Add the butter to the warm carrots and stir until melted and the carrots are coated.
- Stir in the parsley, chives, and thyme. Season with additional salt and freshly ground black pepper to taste.
- Serve warm.
Notes
- You can substitute dried herbs if fresh ones aren’t available, but use only a third of the amount.
- These carrots can be made a few hours ahead and reheated gently on the stovetop.
- Feel free to add a pinch of sugar or honey for a sweeter variation.
