Ingredients

  • 1 English cucumber, thinly sliced
  • 8 slices soft white or whole wheat sandwich bread, crusts removed
  • 4 oz cream cheese, softened
  • 2 tbsp plain Greek yogurt or sour cream
  • 1 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • Optional: microgreens or watercress for garnish

Instructions

  1. In a medium bowl, combine the cream cheese, Greek yogurt, dill, chives, lemon juice, salt, and pepper. Mix until smooth and well combined.
  2. Lay out the bread slices on a clean surface. Spread a generous layer of the herbed cream cheese mixture on each slice.
  3. Arrange cucumber slices in a single layer over half of the bread slices.
  4. Top with the remaining bread slices to form sandwiches.
  5. Press down gently, then slice each sandwich into quarters—either rectangles or triangles.
  6. If desired, garnish with microgreens or a small sprig of dill.
  7. Serve immediately or chill for 30 minutes before serving for best flavor and texture.
