Description

These Herbed Mushrooms on Garlic Toast are a savory, satisfying vegan appetizer or light meal, combining sautéed mushrooms with fresh herbs atop crispy, garlicky bread.


Ingredients

  • 2 tablespoons olive oil
  • 1 shallot, finely chopped
  • 2 garlic cloves, minced (plus 1 for rubbing toast)
  • 1 pound cremini or button mushrooms, sliced
  • 1 tablespoon fresh thyme leaves (or 1 tsp dried)
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • 4 slices rustic bread (like sourdough or ciabatta)
  • Additional olive oil for brushing

Instructions

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat.
  2. Add the shallot and cook for 2–3 minutes until soft and translucent.
  3. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the sliced mushrooms and sauté for 8–10 minutes, stirring occasionally, until browned and their moisture has evaporated.
  5. Stir in the thyme and parsley, then season with salt and pepper to taste. Remove from heat.
  6. While the mushrooms cook, toast the bread slices until golden and crisp.
  7. Rub each toast slice with a peeled garlic clove and brush lightly with olive oil.
  8. Spoon the herbed mushrooms over the garlic toasts and serve immediately.
