These Herbed Mushrooms on Garlic Toast are a savory, satisfying vegan appetizer or light meal, combining sautéed mushrooms with fresh herbs atop crispy, garlicky bread.
Ingredients
- 2 tablespoons olive oil
- 1 shallot, finely chopped
- 2 garlic cloves, minced (plus 1 for rubbing toast)
- 1 pound cremini or button mushrooms, sliced
- 1 tablespoon fresh thyme leaves (or 1 tsp dried)
- 2 tablespoons fresh parsley, chopped
- Salt and freshly ground black pepper, to taste
- 4 slices rustic bread (like sourdough or ciabatta)
- Additional olive oil for brushing
Instructions
- Heat 2 tablespoons olive oil in a large skillet over medium heat.
- Add the shallot and cook for 2–3 minutes until soft and translucent.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Add the sliced mushrooms and sauté for 8–10 minutes, stirring occasionally, until browned and their moisture has evaporated.
- Stir in the thyme and parsley, then season with salt and pepper to taste. Remove from heat.
- While the mushrooms cook, toast the bread slices until golden and crisp.
- Rub each toast slice with a peeled garlic clove and brush lightly with olive oil.
- Spoon the herbed mushrooms over the garlic toasts and serve immediately.
