This high-protein breakfast burrito is a satisfying and nutritious way to start your day, packed with eggs, chicken sausage, veggies, and cheese wrapped in a whole wheat tortilla.
Ingredients
- 2 eggs
- 2 egg whites
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped mushrooms
- 1 fully cooked chicken sausage link, sliced
- 1/4 cup shredded Mexican cheese
- 1 whole wheat tortilla
- Salsa (optional)
Instructions
- Spray a skillet with cooking spray and sauté the onion, bell pepper, and mushrooms over medium heat until soft.
- Add sliced chicken sausage to the skillet and cook until heated through.
- In a bowl, whisk together the eggs and egg whites, then pour into the skillet with the veggies and sausage. Stir gently to scramble.
- Once eggs are cooked, remove skillet from heat and stir in the shredded cheese until melted.
- Spoon the mixture into the center of a whole wheat tortilla and roll into a burrito.
- Top with salsa if desired and serve warm.
