Description

These high protein healthy strawberry cheesecake bites are a lighter twist on traditional cheesecake, delivering a rich, creamy texture with a boost of protein in every bite. Made with wholesome ingredients and a naturally sweet strawberry topping, they’re perfect for meal prep, snacking, or satisfying dessert cravings without feeling heavy.


Ingredients

  • ¾ cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 1 cup cottage cheese
  • ⅓ cup plain Greek yogurt
  • 2 tablespoons cream cheese
  • 2 tablespoons sugar-free maple syrup
  • 1 egg
  • ¼ teaspoon baking powder
  • 1 scoop strawberry or vanilla protein powder
  • ¾ cup frozen strawberries

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper or silicone liners.
  2. In a small bowl, mix graham cracker crumbs with melted butter until combined. Press firmly into the bottom of each liner to form the crust.
  3. In a blender or food processor, combine cottage cheese, Greek yogurt, cream cheese, maple syrup, egg, baking powder, and protein powder. Blend until smooth and creamy.
  4. Evenly divide the cheesecake batter over the prepared crusts.
  5. Bake for 35–40 minutes, or until the centers are set and slightly firm to the touch.
  6. While baking, heat frozen strawberries in a small saucepan over medium heat. Simmer until they break down and thicken into a sauce.
  7. Allow cheesecakes to cool completely at room temperature.
  8. Spoon strawberry topping over each bite.
  9. Refrigerate for at least 4–6 hours, preferably overnight, until fully set.

Notes

  • Store in an airtight container in the refrigerator for up to 5 days.
  • Freeze for up to 2 months and thaw overnight in the refrigerator before serving.
  • Use gluten-free graham crackers for a gluten-free option.
  • For a lower-carb version, omit the crust and use silicone molds.
  • Fresh strawberries can be used in place of frozen; cook down the same way.
