Description

Ingredients

1 lb ground beef

1 onion, diced

1 can (15 oz) green beans, drained

1 can (15 oz) diced tomatoes, undrained

1 cup frozen corn

45 medium potatoes, thinly sliced

1 ½ cups shredded cheddar cheese

1 can (10.5 oz) cream of mushroom soup

1 tsp garlic powder

Salt and pepper to taste


Instructions

  • Preheat the oven to 375°F (190°C).

  • Brown the ground beef in a large skillet over medium heat, breaking it apart as it cooks. Drain excess fat.

  • Add the diced onion to the skillet and cook for 3-4 minutes until softened.

  • In a mixing bowl, combine the beef mixture with green beans, diced tomatoes, corn, cream of mushroom soup, garlic powder, salt, and pepper. Stir well.

  • Grease a 9×13-inch baking dish and layer the thinly sliced potatoes on the bottom.

  • Pour the beef and vegetable mixture over the potatoes, spreading it evenly.

  • Cover with aluminum foil and bake for 45 minutes.

  • Remove foil, sprinkle shredded cheese on top, and bake for another 10-15 minutes, until cheese is melted and potatoes are tender.

  • Let the casserole rest for 5 minutes before serving.
