Ingredients
- 2 tablespoons butter
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 3 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1/2 teaspoon poultry seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup frozen peas and carrots
- 1 can refrigerated biscuits (8 count)
- 2 tablespoons all-purpose flour
Instructions
- In a large pot or Dutch oven, melt butter over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
- Add minced garlic and cook for an additional 1 minute.
- Stir in shredded chicken, chicken broth, cream of chicken soup, poultry seasoning, salt, and pepper. Mix until well combined and bring to a simmer.
- Add frozen peas and carrots and stir to combine.
- Cut biscuits into quarters and toss them with flour to prevent sticking.
- Drop biscuit pieces into the simmering soup, gently pressing them down so they’re submerged.
- Cover the pot and simmer on low heat for 15–20 minutes, or until the biscuits are cooked through and fluffy.
- Stir gently and serve hot.
Notes
- Use rotisserie chicken to save time.
- Do not over-stir once biscuits are added to keep them from breaking apart.
- Add extra veggies like corn or green beans if desired.
- If soup is too thick, add more broth to reach desired consistency.
