Description

This easy Chicken and Dumplings recipe is a comforting and hearty one-pot meal made with tender chicken, fluffy biscuit-style dumplings, and a creamy, flavorful broth. Perfect for a cozy dinner any night of the week.

Ingredients

  • 2 tablespoons butter
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 3 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup frozen peas and carrots
  • 1 can refrigerated biscuits (8 count)
  • 2 tablespoons all-purpose flour

Instructions

  1. In a large pot or Dutch oven, melt butter over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
  2. Add minced garlic and cook for an additional 1 minute.
  3. Stir in shredded chicken, chicken broth, cream of chicken soup, poultry seasoning, salt, and pepper. Mix until well combined and bring to a simmer.
  4. Add frozen peas and carrots and stir to combine.
  5. Cut biscuits into quarters and toss them with flour to prevent sticking.
  6. Drop biscuit pieces into the simmering soup, gently pressing them down so they’re submerged.
  7. Cover the pot and simmer on low heat for 15–20 minutes, or until the biscuits are cooked through and fluffy.
  8. Stir gently and serve hot.

Notes

  • Use rotisserie chicken to save time.
  • Do not over-stir once biscuits are added to keep them from breaking apart.
  • Add extra veggies like corn or green beans if desired.
  • If soup is too thick, add more broth to reach desired consistency.
