Ingredients

1 tablespoon olive oil

1 medium onion, chopped

2 carrots, sliced

2 celery stalks, sliced

3 cloves garlic, minced

8 cups chicken broth

2 cups cooked, shredded chicken (rotisserie chicken works great!)

1 ½ cups egg noodles

2 bay leaves

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley (optional, for garnish)


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
  2. Add the minced garlic and cook for another minute, stirring frequently.
  3. Pour in the chicken broth, and add the shredded chicken, bay leaves, thyme, salt, and pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to a simmer and let the soup cook for about 15 minutes.
  5. Add the egg noodles to the pot and cook for another 8-10 minutes, or until the noodles are tender.
  6. Taste and adjust seasoning with more salt and pepper if needed. Remove the bay leaves before serving.
  7. Serve hot, garnished with fresh parsley if desired.
