Ingredients
1 tablespoon olive oil
1 medium onion, chopped
2 carrots, sliced
2 celery stalks, sliced
3 cloves garlic, minced
8 cups chicken broth
2 cups cooked, shredded chicken (rotisserie chicken works great!)
1 ½ cups egg noodles
2 bay leaves
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley (optional, for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
 - Add the minced garlic and cook for another minute, stirring frequently.
 - Pour in the chicken broth, and add the shredded chicken, bay leaves, thyme, salt, and pepper. Bring the mixture to a boil.
 - Once boiling, reduce the heat to a simmer and let the soup cook for about 15 minutes.
 - Add the egg noodles to the pot and cook for another 8-10 minutes, or until the noodles are tender.
 - Taste and adjust seasoning with more salt and pepper if needed. Remove the bay leaves before serving.
 - Serve hot, garnished with fresh parsley if desired.

- For a vegetable-packed version, add additional vegetables like peas, corn, or spinach.
