Description

Cosmic Brownies are a nostalgic treat with a fudgy texture, rich chocolate flavor, and a playful topping of rainbow sprinkles.


Ingredients

1/2 cup unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 teaspoon salt

1/4 teaspoon baking powder

1/4 cup milk

1/2 cup mini chocolate chips

1/2 cup rainbow sprinkles (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together the melted butter and granulated sugar until smooth and well combined.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
  6. Add the milk and fold in the mini chocolate chips until evenly distributed.
  7. Pour the batter into the prepared baking pan, smoothing the top with a spatula.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake!
  9. Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, top with rainbow sprinkles for that signature Cosmic Brownie look.
  11. Slice into squares and serve!

Notes

  1. For a nutty version, add chopped walnuts or pecans into the batter.
  2. For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
  3. For a richer chocolate flavor, use dark chocolate chips instead of milk chocolate chips.
  4. Optionally add a layer of chocolate ganache or frosting on top for extra indulgence.
  5. You can also add mini marshmallows along with the sprinkles before baking for a gooey, toasted marshmallow effect.
