Cosmic Brownies are a nostalgic treat with a fudgy texture, rich chocolate flavor, and a playful topping of rainbow sprinkles.
Ingredients
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 cup milk
1/2 cup mini chocolate chips
1/2 cup rainbow sprinkles (for topping)
Instructions
- Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a large mixing bowl, whisk together the melted butter and granulated sugar until smooth and well combined.
- Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
- Add the milk and fold in the mini chocolate chips until evenly distributed.
- Pour the batter into the prepared baking pan, smoothing the top with a spatula.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Be careful not to overbake!
- Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
- Once cooled, top with rainbow sprinkles for that signature Cosmic Brownie look.
- Slice into squares and serve!
