This homemade microwave lemon curd is quick, easy, and bursting with bright citrus flavor. It’s silky smooth, tangy, and perfect for spreading on toast, layering in desserts, or enjoying by the spoonful.
Ingredients
- 1 cup granulated sugar
- 3 large eggs
- 1 cup fresh lemon juice (about 4 to 5 lemons)
- Zest of 2 lemons
- 1/2 cup unsalted butter, melted
Instructions
- In a large microwave-safe bowl, whisk together the sugar and eggs until smooth and well combined.
- Stir in the lemon juice, lemon zest, and melted butter.
- Microwave the mixture in 1-minute intervals, stirring well after each interval.
- Continue microwaving and stirring until the mixture thickens and coats the back of a spoon. This usually takes about 4 to 6 minutes total.
- Once thickened, remove from the microwave and pour the lemon curd through a fine-mesh sieve into a clean bowl to remove any lumps or zest (optional).
- Allow to cool, then transfer to jars or airtight containers and refrigerate. It will continue to thicken as it cools.

- The lemon curd will thicken more as it chills in the fridge.
