Description

Ingredients

  • 1 cup orzo pasta (200g)
  • 2 tbsp butter (30g)
  • 1 garlic clove, minced
  • 1 cup vegetable broth (240ml)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1/4 cup Parmesan cheese (30g)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a medium saucepan, cook the orzo in the vegetable broth over medium heat until tender and most of the liquid is absorbed.
  2. In a separate pan, melt the butter and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the cooked orzo to the pan with garlic, then stir in the lemon juice, lemon zest, and Parmesan cheese.
  4. Season with salt and pepper to taste, stirring until everything is well combined and creamy.
  5. Garnish with fresh parsley and serve warm.
