Ingredients
- 1 cup orzo pasta (200g)
- 2 tbsp butter (30g)
- 1 garlic clove, minced
- 1 cup vegetable broth (240ml)
- Juice of 1 lemon
- Zest of 1 lemon
- 1/4 cup Parmesan cheese (30g)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a medium saucepan, cook the orzo in the vegetable broth over medium heat until tender and most of the liquid is absorbed.
- In a separate pan, melt the butter and sauté the minced garlic until fragrant, about 1 minute.
- Add the cooked orzo to the pan with garlic, then stir in the lemon juice, lemon zest, and Parmesan cheese.
- Season with salt and pepper to taste, stirring until everything is well combined and creamy.
- Garnish with fresh parsley and serve warm.
