Description

These homemade protein peanut butter cups are rich, chocolatey, and packed with protein for a satisfying snack or dessert. Made with simple ingredients, they are easy to prepare and perfect for keeping in the freezer.


Ingredients

  • 1/2 cup natural peanut butter
  • 12 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil, melted (or additional peanut butter)
  • 1/4 cup plus 1 tablespoon vanilla protein powder or unflavoured collagen
  • 2 cups chocolate chips (semi sweet or dark)
  • 1 tablespoon coconut oil
  • Sea salt, for topping

Instructions

  1. Line a 12-cavity muffin tin with muffin liners or use a silicone muffin tray.
  2. In a large mixing bowl, combine the peanut butter, maple syrup, vanilla extract, melted coconut oil, and protein powder. Stir until smooth and combined, then refrigerate for 5 minutes.
  3. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second increments, stirring between each interval, until fully melted and smooth.
  4. Add 1 tablespoon of melted chocolate into each muffin liner. Use the back of a spoon to spread some chocolate slightly up the sides. Freeze for 10 minutes until firm.
  5. Roll the peanut butter mixture into 12 small balls. Place one ball into each chocolate cup and gently flatten.
  6. Top each cup with about 1 tablespoon of the remaining melted chocolate, covering the filling completely.
  7. Freeze for another 10 minutes until set. Sprinkle with sea salt before serving.
  8. Store the peanut butter cups in the freezer in an airtight container.
