Description

Savoiardi, also known as Italian ladyfingers, are light, airy sponge cookies with a delicate crisp exterior and soft center. Perfect for tiramisu or enjoyed with coffee, these classic biscuits are simple to make and require just a few basic ingredients.


Ingredients

  • 4 large eggs, separated
  • 1/2 cup (100g) granulated sugar, divided
  • 1 cup (120g) all-purpose flour, sifted
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, beat the egg whites with half of the sugar until stiff, glossy peaks form.
  3. In a separate bowl, beat the egg yolks with the remaining sugar and vanilla extract until pale and thick.
  4. Gently fold the egg yolk mixture into the whipped egg whites.
  5. Sift the flour and salt over the mixture and carefully fold until just combined, being careful not to deflate the batter.
  6. Transfer the batter to a piping bag fitted with a round tip and pipe 3- to 4-inch strips onto the prepared baking sheets.
  7. Dust the tops lightly with powdered sugar and let sit for 5 minutes. Dust again if desired.
  8. Bake for 12–15 minutes or until lightly golden and firm to the touch.
  9. Remove from the oven and allow to cool completely on a wire rack before serving or storing.

Notes

  • Be gentle when folding to maintain the airy texture.
  • Ladyfingers should be crisp on the outside and soft inside.
  • Store in an airtight container for up to 1 week.
  • These cookies are ideal for tiramisu, trifles, or layered desserts.
