Ingredients
- 1 lb (16 oz) fresh strawberries, hulled and sliced
- ¾ cup granulated sugar, divided
- 1 tbsp lemon juice
- 1 ½ cups heavy whipping cream
- 1 ½ cups whole milk
- 1 tsp pure vanilla extract
- ⅛ tsp salt
Instructions
- In a medium saucepan, combine the strawberries, ¼ cup of sugar, and lemon juice. Cook over medium heat for about 10 minutes until the strawberries soften and release their juices.
- Remove from heat and mash the strawberries to your desired consistency. Let cool completely.
- In a large mixing bowl, whisk together the remaining ½ cup of sugar, heavy cream, milk, vanilla extract, and salt until the sugar is dissolved.
- Add the cooled strawberry mixture to the cream base and stir to combine.
- Cover and chill the mixture in the refrigerator for at least 4 hours or overnight.
- Once chilled, churn the mixture in an ice cream maker according to the manufacturer’s instructions (usually 20–25 minutes).
- Transfer the churned ice cream to a freezer-safe container and freeze for at least 4 hours or until firm.
- Let the ice cream sit at room temperature for a few minutes before scooping and serving.
