Ingredients

  • 2 cups cooked chicken, shredded
  • 8 oz egg noodles
  • 4 cups chicken broth
  • 1 cup water
  • 1 can cream of chicken soup
  • 2 tbsp butter
  • 1/2 cup celery, finely chopped
  • 1/2 cup onion, finely chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp dried thyme
  • 1/4 cup heavy cream
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a large pot over medium heat, melt the butter and sauté the chopped celery and onion for about 5 minutes until softened.
  2. Stir in the garlic powder, salt, black pepper, and dried thyme, cooking for about 30 seconds until fragrant.
  3. Pour in the chicken broth, water, and cream of chicken soup, stirring well until the soup is fully incorporated.
  4. Bring the mixture to a gentle boil, then add the egg noodles and cook according to package instructions until tender.
  5. Add the shredded chicken and stir well to combine. Reduce the heat to low and simmer for about 5 minutes.
  6. Stir in the heavy cream and cook for another 2–3 minutes until the broth becomes creamy and rich.
  7. Taste and adjust seasoning if needed.
  8. Garnish with fresh parsley before serving.

Notes

  • Rotisserie chicken works well for quick preparation.
  • If you prefer a thicker broth, allow the noodles to simmer a few extra minutes to absorb more liquid.
  • Frozen mixed vegetables such as peas and carrots can be added for extra nutrition.
