Description
These honey soy chicken drumsticks (or thighs or wings) are tender, flavorful, and easy to make with a simple marinade of pantry staples. Perfect for a weeknight dinner or casual gathering.
Ingredients
- 1/2 cup honey
- 1/2 cup soy sauce (low sodium if preferred)
- 1/4 cup ketchup
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh ginger
- Chicken drumsticks, thighs, or wings (about 3 to 4 lbs)
Instructions
- In a bowl, whisk together the honey, soy sauce, ketchup, garlic, and ginger until well combined.
- Place the chicken pieces in a large baking dish or zip-top bag.
- Pour the marinade over the chicken and toss to coat evenly. Cover and marinate in the fridge for at least 30 minutes, ideally overnight.
- Preheat the oven to 375°F (190°C).
- Arrange the chicken pieces in a single layer in a baking dish. Pour marinade over top if using a bag.
- Bake uncovered for 45 minutes to 1 hour, turning the chicken once or twice during cooking, until the chicken is cooked through and glazed.
- Serve hot with rice or your favorite sides.
Notes
- Marinating overnight enhances the flavor.
- Leftovers are great cold or reheated.
- You can reduce the marinade on the stovetop to make a sauce.
- Try with bone-in, skin-on or skinless chicken depending on preference.
