Ingredients
- 2 pounds carrots, peeled and sliced
- 1/4 cup salted butter
- 1/4 cup honey
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon pepper (or to taste)
- Optional: fresh parsley, chopped (for garnish)
Instructions
- Place sliced carrots in a large pot and cover with water. Bring to a boil and cook for about 6-8 minutes, or until carrots are just tender. Drain and set aside.
- In a large skillet or saucepan, melt butter over medium heat.
- Add honey, salt, and pepper to the melted butter and stir to combine.
- Add the cooked carrots to the honey butter mixture and cook for 4-5 minutes, stirring occasionally, until the carrots are well coated and the glaze thickens slightly.
- Transfer to a serving dish and garnish with chopped fresh parsley if desired. Serve warm.
Notes
- For added flavor, try a pinch of cinnamon or a splash of orange juice in the glaze.
- Use baby carrots as a shortcut—just adjust boiling time slightly.
