Ingredients
- 2 pounds baby carrots
- 1/2 cup butter
- 1/4 cup honey
- 4 garlic cloves, minced or 2 tsp garlic powder
- 1/2 teaspoon salt
- Cracked black pepper to taste
- 2 tablespoons fresh chopped parsley
Instructions
- Preheat the oven to 425°F (220°C) and lightly grease a large baking sheet.
- Melt the butter in a pan or skillet over medium heat.
- Pour in the honey and stir until completely melted and combined with the butter.
- Add the garlic and cook for 30 seconds until fragrant, stirring continuously.
- Add the carrots and toss them in the sauce, allowing it to thicken for about a minute.
- Season with salt and cracked black pepper to taste.
- Transfer the carrots to the prepared baking sheet in a single layer.
- Roast for 20 minutes or until the carrots are fork-tender.
- Broil for 2-3 minutes on high to slightly crisp and char the edges.
- Sprinkle with fresh chopped parsley before serving.
Notes
- You can substitute baby carrots with sliced whole carrots.
- Adjust honey to taste for more or less sweetness.
- Use garlic powder if fresh garlic is not available.
