Description

Ingredients

  • 2 pounds baby carrots
  • 1/2 cup butter
  • 1/4 cup honey
  • 4 garlic cloves, minced or 2 tsp garlic powder
  • 1/2 teaspoon salt
  • Cracked black pepper to taste
  • 2 tablespoons fresh chopped parsley

Instructions

  1. Preheat the oven to 425°F (220°C) and lightly grease a large baking sheet.
  2. Melt the butter in a pan or skillet over medium heat.
  3. Pour in the honey and stir until completely melted and combined with the butter.
  4. Add the garlic and cook for 30 seconds until fragrant, stirring continuously.
  5. Add the carrots and toss them in the sauce, allowing it to thicken for about a minute.
  6. Season with salt and cracked black pepper to taste.
  7. Transfer the carrots to the prepared baking sheet in a single layer.
  8. Roast for 20 minutes or until the carrots are fork-tender.
  9. Broil for 2-3 minutes on high to slightly crisp and char the edges.
  10. Sprinkle with fresh chopped parsley before serving.

Notes

  • You can substitute baby carrots with sliced whole carrots.
