Ingredients
- 1 tablespoon vegetable oil
- 1 cup thinly sliced carrots
- 2 cups broccoli florets
- 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
- 4 cloves garlic, minced
- 1/4 cup low sodium soy sauce
- 1/4 cup honey
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- Salt and pepper to taste
- Optional: sesame seeds and sliced green onions for garnish
Instructions
- Heat 1 teaspoon of vegetable oil in a large pan over medium-high heat. Add the carrots and broccoli, cooking for 4–6 minutes or until just tender. Remove vegetables from the pan and set aside.
- Add the remaining 2 teaspoons of oil to the pan. Season the chicken with salt and pepper, then add to the pan. Cook for 4–6 minutes or until browned and cooked through.
- Add the garlic to the pan and cook for 30 seconds.
- Return the vegetables to the pan with the chicken.
- In a small bowl, whisk together the soy sauce, honey, and sesame oil. Pour the sauce into the pan and stir to coat everything evenly.
- In another small bowl, mix the cornstarch and cold water until smooth. Add this to the pan and cook for 1–2 minutes until the sauce thickens.
- Garnish with sesame seeds and green onions if desired. Serve immediately.
Notes
- Use any combination of vegetables you like, such as bell peppers, snap peas, or zucchini.
- For extra flavor, marinate the chicken in some of the sauce for 15–30 minutes before cooking.
- This dish pairs well with steamed rice or noodles.
