Description

These honey glazed carrots and green beans are a vibrant, sweet and savory side dish perfect for weeknight dinners or holiday meals. Fresh vegetables are lightly sautéed and coated in a buttery honey glaze for irresistible flavor.

Ingredients

  • 2 cups carrots, sliced
  • 2 cups fresh green beans, trimmed
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the carrots and cook for 3 minutes.
  2. Add the green beans to the same pot and cook for an additional 3–4 minutes until vegetables are tender-crisp. Drain and set aside.
  3. Heat olive oil and butter in a large skillet over medium heat.
  4. Add minced garlic and sauté for about 30 seconds until fragrant.
  5. Stir in the honey, salt, and black pepper.
  6. Add the drained carrots and green beans to the skillet and toss well to coat in the glaze.
  7. Cook for 3–5 minutes, stirring occasionally, until vegetables are tender and evenly glazed.
  8. Remove from heat, garnish with chopped parsley if desired, and serve warm.

Notes

  • Do not overcook the vegetables to maintain a slight crisp texture.
  • You can substitute maple syrup for honey for a slightly different flavor.
  • Add a squeeze of fresh lemon juice for brightness.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
