Description
A rich, creamy Vietnamese-style house mayonnaise commonly used in banh mi sandwiches, slightly savory and tangy with a hint of sweetness.
Ingredients
- 1 large egg yolk
- 1 cup neutral oil (canola or vegetable oil)
- 1 tablespoon fresh lemon juice
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 teaspoon Maggi seasoning or soy sauce
Instructions
- Add egg yolk, lemon juice, sugar, salt, and Maggi seasoning into a tall container or bowl.
- Using an immersion blender or whisk, blend until smooth.
- Slowly drizzle in the oil while blending continuously until the mixture thickens into mayonnaise.
- Taste and adjust seasoning if needed.
- Store in an airtight container in the refrigerator.
