Ingredients

  • 1 3/4 cups old-fashioned oats
  • 1 1/2 cups all-purpose flour
  • 1 cup packed brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, melted
  • 2 1/2 cups peeled and diced apples (about 23 apples)
  • 2 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper and set aside.
  2. In a large bowl, combine oats, flour, brown sugar, baking powder, cinnamon, and salt.
  3. Stir in melted butter until the mixture is crumbly.
  4. Press about two-thirds of the mixture into the bottom of the prepared pan to form the crust.
  5. In another bowl, mix diced apples with flour, granulated sugar, cinnamon, nutmeg, and vanilla extract.
  6. Spread the apple mixture evenly over the crust layer.
  7. Sprinkle the remaining crumb mixture evenly over the top of the apples.
  8. Bake for 40–45 minutes or until the top is golden brown and the apples are tender.
  9. Let the bars cool completely in the pan before lifting them out and slicing into squares.

  • Bars store well in an airtight container for up to 3 days at room temperature.
