Description

A naturally sweet, smooth date paste made with just dates and water, perfect as a healthy substitute for refined sugar in recipes.


Ingredients

  • 1 tightly packed cup dates, pitted (about 5oz or 150g)
  • ¾ cup hot, recently boiled water

Instructions

  1. Add dates to a bowl and cover with hot water. Soak for 10 minutes.
  2. Transfer the dates along with the soaking water to a high-speed blender. If needed, allow the liquid to cool slightly before blending.
  3. Blend on high speed for about 1 minute, scraping down the sides as needed.
  4. Continue blending until a smooth paste forms. Transfer to a glass jar and refrigerate until ready to use.

Notes

  • Store in an airtight container in the refrigerator for up to 1–2 weeks.
  • Use as a substitute for sugar in baking, smoothies, or sauces.
  • Add a little extra water if a thinner consistency is desired.
  • Medjool dates work best for a naturally soft and sweet paste.
