Description

This Indian Roasted Butternut Squash recipe is a flavorful and simple side dish that combines sweet, tender roasted squash with warm Indian spices. Perfect for a fall meal or as part of a festive spread.

Ingredients

  • 1 medium butternut squash (about 2 pounds), peeled, seeded, and cubed
  • 1 tablespoon oil (avocado or olive oil)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne (adjust to taste)
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon salt (adjust to taste)
  • 1 tablespoon lemon juice (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the cubed butternut squash with oil, cumin seeds, paprika, cayenne, turmeric, and salt until evenly coated.
  3. Spread the squash in a single layer on a parchment-lined baking sheet.
  4. Roast for 30-35 minutes or until the squash is tender and slightly caramelized, flipping halfway through.
  5. Remove from the oven, and if desired, drizzle with lemon juice and garnish with chopped cilantro before serving.
