Description

This London Fog Cake is a delightful dessert inspired by the popular Earl Grey tea latte. It features layers of moist Earl Grey-infused cake, creamy vanilla bean custard, and a light, whipped Earl Grey frosting, creating a perfect blend of tea and sweetness.


Ingredients

  • 1 cup whole milk
  • 4 Earl Grey tea bags
  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1/2 cup sour cream
  • Vanilla bean custard (homemade or store-bought)
  • Whipped Earl Grey frosting (see instructions)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 6-inch cake pans.
  2. Heat the milk until just simmering, then steep the Earl Grey tea bags in it for about 10 minutes. Remove the tea bags and let the milk cool.
  3. In a bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, beat the butter and sugar together until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition. Mix in vanilla extract.
  6. Alternate adding the dry ingredients and the Earl Grey milk to the butter mixture, beginning and ending with dry ingredients. Mix in sour cream until just combined.
  7. Divide batter evenly between prepared pans and bake for 25–30 minutes, or until a toothpick comes out clean.
  8. Cool cakes in pans for 10 minutes, then remove and let cool completely on wire racks.
  9. Prepare the vanilla bean custard if making from scratch and let it cool.
  10. Make the Earl Grey whipped frosting by steeping 2 tea bags in 1/4 cup hot milk, cooling it, and whipping it with 1 cup cold heavy cream, 1/4 cup powdered sugar, and 1 tsp vanilla extract until stiff peaks form.
  11. Assemble the cake by layering the cakes with custard in between and covering the outside with the Earl Grey whipped frosting.
  12. Chill the cake before serving to let it set.

Notes

  • You can use store-bought custard to save time.
  • Make sure the Earl Grey milk is fully cooled before adding to the batter or frosting.
  • This cake is best served chilled.
  • Use high-quality Earl Grey tea for a stronger flavor.
