Description

These Caramel Apple Cheesecake Bars are a luscious combination of creamy cheesecake, spiced apples, and a buttery streusel topping, all drizzled with rich caramel sauce. Perfect for fall gatherings or holiday desserts.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 packages (8 oz each) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 medium apples, peeled, cored, and chopped
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup packed brown sugar (for topping)
  • 1/2 cup all-purpose flour (for topping)
  • 1/4 cup quick oats
  • 1/4 cup (1/2 stick) unsalted butter, cold and cubed (for topping)
  • 1/2 cup caramel sauce (for drizzling)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. In a bowl, mix 2 cups flour and 1/2 cup brown sugar. Cut in 1 cup softened butter until crumbly. Press into the bottom of the prepared pan and bake for 15 minutes.
  3. Meanwhile, beat cream cheese and 1/2 cup granulated sugar until smooth. Add eggs and vanilla extract, mixing until well combined. Pour over baked crust.
  4. In a separate bowl, toss chopped apples with cinnamon and nutmeg, then evenly spread over cheesecake layer.
  5. For the topping, combine 1/2 cup brown sugar, 1/2 cup flour, quick oats, and cold cubed butter. Mix until crumbly and sprinkle over apple layer.
  6. Bake for 30–35 minutes or until the center is set and topping is golden.
  7. Cool completely, then refrigerate for at least 2 hours before cutting into bars.
  8. Drizzle with caramel sauce before serving.
