Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 2 pounds ground beef
- 2 tablespoons tomato paste
- 1 (28-ounce) can crushed tomatoes
- 1 (15-ounce) can diced tomatoes
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add the onion and bell peppers, and sauté until softened, about 5 minutes.
- Add the garlic and cook for another minute, until fragrant.
- Add the ground beef, breaking it up with a spoon, and cook until browned.
- Stir in the tomato paste and cook for 2 minutes to deepen the flavor.
- Add the crushed tomatoes, diced tomatoes, kidney beans, black beans, and beef broth. Stir to combine.
- Mix in the chili powder, cumin, paprika, oregano, cayenne (if using), salt, and pepper.
- Bring the chili to a boil, then reduce heat to low and simmer uncovered for 30–45 minutes, stirring occasionally.
- Taste and adjust seasoning as needed. Serve hot with your favorite toppings.
Notes
- For a spicier chili, increase the cayenne pepper or add chopped jalapeños.
- This chili tastes even better the next day as the flavors develop.
- Can be frozen in airtight containers for up to 3 months.
