Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 pounds ground beef
  • 2 tablespoons tomato paste
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can diced tomatoes
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion and bell peppers, and sauté until softened, about 5 minutes.
  2. Add the garlic and cook for another minute, until fragrant.
  3. Add the ground beef, breaking it up with a spoon, and cook until browned.
  4. Stir in the tomato paste and cook for 2 minutes to deepen the flavor.
  5. Add the crushed tomatoes, diced tomatoes, kidney beans, black beans, and beef broth. Stir to combine.
  6. Mix in the chili powder, cumin, paprika, oregano, cayenne (if using), salt, and pepper.
  7. Bring the chili to a boil, then reduce heat to low and simmer uncovered for 30–45 minutes, stirring occasionally.
  8. Taste and adjust seasoning as needed. Serve hot with your favorite toppings.

Notes

  • For a spicier chili, increase the cayenne pepper or add chopped jalapeños.
  • This chili tastes even better the next day as the flavors develop.
