Description

Crispy on the outside and tender on the inside, these ube waffles are vibrantly purple, lightly sweet, and infused with the nutty-vanilla flavor of ube, making them perfect for breakfast or brunch.


Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup melted butter or neutral oil
  • 1/2 cup ube halaya (ube jam)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ube extract (optional, for color and flavor)

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the milk, eggs, melted butter, ube halaya, vanilla extract, and ube extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and whisk until just combined. Do not overmix.
  5. Lightly grease the waffle iron if needed.
  6. Pour the batter into the preheated waffle iron and cook until the waffles are crispy and golden with a deep purple color.
  7. Carefully remove the waffles and repeat with the remaining batter.
  8. Serve warm with butter, syrup, whipped cream, or fresh fruit.
