Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 large eggs
- 1/2 cup unsalted butter, melted
- 1/4 cup honey
- 2 tablespoons butter (for honey butter topping)
- 2 tablespoons honey (for honey butter topping)
Instructions
- Preheat your oven to 375°F (190°C) and grease an 8×8-inch baking dish or cast-iron skillet.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix the milk, eggs, melted butter, and honey until well combined.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
- Transfer the batter to the prepared baking dish and spread evenly.
- Bake for 22–28 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- While the cornbread bakes, mix the topping butter and honey until smooth.
- Brush the warm cornbread with honey butter before serving.
Notes
- Do not overmix the batter to keep the cornbread tender.
