Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup honey
  • 2 tablespoons butter (for honey butter topping)
  • 2 tablespoons honey (for honey butter topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8-inch baking dish or cast-iron skillet.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix the milk, eggs, melted butter, and honey until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
  5. Transfer the batter to the prepared baking dish and spread evenly.
  6. Bake for 22–28 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  7. While the cornbread bakes, mix the topping butter and honey until smooth.
  8. Brush the warm cornbread with honey butter before serving.
