These Raspberry Yogurt Bars are a delicious and healthy treat made with a crunchy granola crust, creamy Greek yogurt, and sweet raspberries. Perfect for a light dessert or snack.
Ingredients
- 2 cups granola
- 2 tablespoons coconut oil (melted)
- 2 cups plain Greek yogurt
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
Instructions
- Line an 8×8 inch baking dish with parchment paper.
- In a bowl, mix the granola with melted coconut oil until evenly coated.
- Press the granola mixture into the bottom of the prepared dish to form a crust.
- In another bowl, mix Greek yogurt, honey or maple syrup, and vanilla extract until smooth.
- Spread the yogurt mixture evenly over the granola crust.
- Gently press fresh raspberries into the yogurt layer.
- Freeze for at least 3-4 hours or until completely set.
- Remove from the freezer and let sit at room temperature for a few minutes before cutting into bars.
- Store leftovers in an airtight container in the freezer.
Notes
- You can use flavored yogurt if preferred, but it may add extra sugar.
- Swap raspberries with any other berries or fruits you like.
- Add nuts or seeds to the granola for extra crunch and nutrition.
