Description

These Raspberry Yogurt Bars are a delicious and healthy treat made with a crunchy granola crust, creamy Greek yogurt, and sweet raspberries. Perfect for a light dessert or snack.


Ingredients

  • 2 cups granola
  • 2 tablespoons coconut oil (melted)
  • 2 cups plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Line an 8×8 inch baking dish with parchment paper.
  2. In a bowl, mix the granola with melted coconut oil until evenly coated.
  3. Press the granola mixture into the bottom of the prepared dish to form a crust.
  4. In another bowl, mix Greek yogurt, honey or maple syrup, and vanilla extract until smooth.
  5. Spread the yogurt mixture evenly over the granola crust.
  6. Gently press fresh raspberries into the yogurt layer.
  7. Freeze for at least 3-4 hours or until completely set.
  8. Remove from the freezer and let sit at room temperature for a few minutes before cutting into bars.
  9. Store leftovers in an airtight container in the freezer.

Notes

  • You can use flavored yogurt if preferred, but it may add extra sugar.
  • Swap raspberries with any other berries or fruits you like.
