Ingredients

  • 4 cups Brussels sprouts, thinly shaved

  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Trim the ends of the Brussels sprouts and thinly shave them using a sharp knife or mandoline.
  2. Place the shaved Brussels sprouts in a large mixing bowl.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.
  4. Pour the dressing over the Brussels sprouts and toss well to coat evenly.
