Ingredients
- 4 cups Brussels sprouts, thinly shaved

- 1 teaspoon Dijon mustard

Instructions
- Trim the ends of the Brussels sprouts and thinly shave them using a sharp knife or mandoline.
- Place the shaved Brussels sprouts in a large mixing bowl.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.
- Pour the dressing over the Brussels sprouts and toss well to coat evenly.
