Ingredients
- 2 tbsp olive oil
- 1 small red onion, chopped
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp red chili flakes (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1/4 cup water
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped fresh cilantro or parsley (optional for garnish)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped red onion and sauté for 2-3 minutes until softened.
- Add minced garlic and sauté for another 30 seconds.
- Stir in cumin, paprika, chili flakes (if using), salt, and pepper. Cook for 1 minute.
- Add chickpeas, diced tomatoes, and water. Stir to combine.
- Bring to a simmer and cook for 10 minutes, allowing the flavors to blend and the sauce to thicken slightly.
- Sprinkle shredded mozzarella evenly over the chickpea mixture.
- Cover the skillet and cook for 3-4 minutes until the cheese is melted and bubbly.
- Garnish with chopped cilantro or parsley, if desired, and serve warm.
Notes
- You can use other cheeses like cheddar or Monterey Jack for variation.
- Serve with crusty bread, over rice, or as a dip with tortilla chips.
- Add more chili flakes if you prefer a spicier version.
