Description

Ingredients

  • 2 tbsp olive oil
  • 1 small red onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/4 tsp red chili flakes (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1/4 cup water
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh cilantro or parsley (optional for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped red onion and sauté for 2-3 minutes until softened.
  3. Add minced garlic and sauté for another 30 seconds.
  4. Stir in cumin, paprika, chili flakes (if using), salt, and pepper. Cook for 1 minute.
  5. Add chickpeas, diced tomatoes, and water. Stir to combine.
  6. Bring to a simmer and cook for 10 minutes, allowing the flavors to blend and the sauce to thicken slightly.
  7. Sprinkle shredded mozzarella evenly over the chickpea mixture.
  8. Cover the skillet and cook for 3-4 minutes until the cheese is melted and bubbly.
  9. Garnish with chopped cilantro or parsley, if desired, and serve warm.

Notes

  • You can use other cheeses like cheddar or Monterey Jack for variation.
  • Serve with crusty bread, over rice, or as a dip with tortilla chips.
  • Add more chili flakes if you prefer a spicier version.
