Description

Soft, fluffy vegan ube rolls filled with sweet purple yam flavor and finished with a lightly sweet glaze, perfect for breakfast or dessert.


Ingredients

  • 3 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 tsp instant yeast
  • 1/2 tsp salt
  • 3/4 cup warm plant-based milk (soy or almond)
  • 1/4 cup vegan butter, melted
  • 1/2 cup ube halaya (ube jam)
  • 1 tsp vanilla extract
  • 1 tbsp neutral oil (for greasing)
  • 1/4 cup brown sugar (for filling)
  • 1/2 tsp cinnamon (optional)
  • 1/2 cup powdered sugar (for glaze)
  • 12 tbsp plant-based milk (for glaze)

Instructions

  1. In a large bowl, mix warm plant-based milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.
  2. Add melted vegan butter, vanilla extract, salt, and half of the flour. Mix until combined.
  3. Gradually add remaining flour and knead until a soft, smooth dough forms.
  4. Place dough in a greased bowl, cover, and let rise for about 1 hour or until doubled in size.
  5. Roll out the dough into a rectangle on a floured surface.
  6. Spread ube halaya evenly over the dough, then sprinkle with brown sugar and cinnamon if using.
  7. Roll the dough tightly into a log and slice into even rolls.
  8. Arrange rolls in a greased baking dish, cover, and let rise for another 30 minutes.
  9. Bake at 350°F (175°C) for 22–25 minutes until lightly golden.
  10. Whisk powdered sugar with plant-based milk and drizzle over warm rolls before serving.

Notes

  • Use homemade or store-bought ube halaya for best flavor.
  • Do not overheat the plant-based milk to avoid killing the yeast.
  • Rolls are best enjoyed fresh but can be stored for up to 2 days.
