Description
Soft, fluffy vegan ube rolls filled with sweet purple yam flavor and finished with a lightly sweet glaze, perfect for breakfast or dessert.
Ingredients
- 3 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/4 tsp instant yeast
- 1/2 tsp salt
- 3/4 cup warm plant-based milk (soy or almond)
- 1/4 cup vegan butter, melted
- 1/2 cup ube halaya (ube jam)
- 1 tsp vanilla extract
- 1 tbsp neutral oil (for greasing)
- 1/4 cup brown sugar (for filling)
- 1/2 tsp cinnamon (optional)
- 1/2 cup powdered sugar (for glaze)
- 1–2 tbsp plant-based milk (for glaze)
Instructions
- In a large bowl, mix warm plant-based milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.
- Add melted vegan butter, vanilla extract, salt, and half of the flour. Mix until combined.
- Gradually add remaining flour and knead until a soft, smooth dough forms.
- Place dough in a greased bowl, cover, and let rise for about 1 hour or until doubled in size.
- Roll out the dough into a rectangle on a floured surface.
- Spread ube halaya evenly over the dough, then sprinkle with brown sugar and cinnamon if using.
- Roll the dough tightly into a log and slice into even rolls.
- Arrange rolls in a greased baking dish, cover, and let rise for another 30 minutes.
- Bake at 350°F (175°C) for 22–25 minutes until lightly golden.
- Whisk powdered sugar with plant-based milk and drizzle over warm rolls before serving.
Notes
- Use homemade or store-bought ube halaya for best flavor.
- Do not overheat the plant-based milk to avoid killing the yeast.
- Rolls are best enjoyed fresh but can be stored for up to 2 days.
