Description
Yaki Udon is a savory Japanese stir-fried noodle dish loaded with tender chicken, crisp vegetables, and a flavorful soy-based sauce. This quick and satisfying meal is perfect for busy weeknights and comfort food cravings.
Ingredients
- 14 oz fresh udon noodles
- 1 lb boneless skinless chicken breast, sliced thin
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 small onion, sliced
- 1 cup shredded cabbage
- 1 carrot, julienned
- 1 bell pepper, sliced
- 3 green onions, sliced
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp mirin
- 1 tsp sesame oil
- 1/2 tsp black pepper
- 1 tbsp sesame seeds (optional)
Instructions
- Cook the udon noodles according to package instructions if required, then drain and set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken and cook for 4–5 minutes until fully cooked and lightly browned. Remove from the pan and set aside.
- Add the remaining tablespoon of oil to the pan. Sauté garlic and onion for 1–2 minutes until fragrant.
- Add cabbage, carrot, and bell pepper. Stir-fry for 3–4 minutes until slightly tender but still crisp.
- Return the cooked chicken to the pan and add the drained udon noodles.
- In a small bowl, mix soy sauce, oyster sauce, mirin, sesame oil, and black pepper. Pour the sauce over the noodles.
- Toss everything together and stir-fry for 2–3 minutes until evenly coated and heated through.
- Garnish with green onions and sesame seeds before serving.
Notes
- You can substitute chicken with shrimp or tofu if preferred.
- Adjust soy sauce to control saltiness.
- Add chili flakes or sriracha for a spicy kick.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
