Description

Yaki Udon is a savory Japanese stir-fried noodle dish loaded with tender chicken, crisp vegetables, and a flavorful soy-based sauce. This quick and satisfying meal is perfect for busy weeknights and comfort food cravings.


Ingredients

  • 14 oz fresh udon noodles
  • 1 lb boneless skinless chicken breast, sliced thin
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • 1 bell pepper, sliced
  • 3 green onions, sliced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp mirin
  • 1 tsp sesame oil
  • 1/2 tsp black pepper
  • 1 tbsp sesame seeds (optional)

Instructions

  1. Cook the udon noodles according to package instructions if required, then drain and set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the sliced chicken and cook for 4–5 minutes until fully cooked and lightly browned. Remove from the pan and set aside.
  4. Add the remaining tablespoon of oil to the pan. Sauté garlic and onion for 1–2 minutes until fragrant.
  5. Add cabbage, carrot, and bell pepper. Stir-fry for 3–4 minutes until slightly tender but still crisp.
  6. Return the cooked chicken to the pan and add the drained udon noodles.
  7. In a small bowl, mix soy sauce, oyster sauce, mirin, sesame oil, and black pepper. Pour the sauce over the noodles.
  8. Toss everything together and stir-fry for 2–3 minutes until evenly coated and heated through.
  9. Garnish with green onions and sesame seeds before serving.

Notes

  • You can substitute chicken with shrimp or tofu if preferred.
  • Adjust soy sauce to control saltiness.
  • Add chili flakes or sriracha for a spicy kick.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
